Gluten-Free Avocado, Orange and Quinoa Salsa

Avocado, Orange and Quinoa Salsa

'A foundation of sunny oranges and nutty quinoa is the perfect destination for those perfectly firm-ripe avocados sitting on your counter,' says author Camilla Sauslbury, author of 500 Best Quinoa Recipes


2     small firm-ripe Hass avocados, diced      2

1     can (15 oz/425 mL) mandarin oranges packed in juice, drained and coarsely chopped      1

1 cup cooked black, red or white quinoa, cooled   250 mL

1⁄3 cup     finely chopped red onion      75 mL

1⁄3 cup     packed fresh cilantro leaves, chopped     75 mL

1⁄4 tsp     chipotle chile powder or cayenne pepper   1 mL

1 tbsp      freshly squeezed lime juice   15 mL

        Fine sea salt

1.    In a large bowl, combine avocados, mandarin oranges, quinoa, red onion, cilantro, chipotle chile powder and lime juice, tossing gently. Season to taste with salt. Cover and refrigerate for at least 30 minutes, until chilled, or for up to 2 hours.


Tip: If you can only find 10-oz (287 mL) cans of mandarin oranges, use 11⁄2 cans. 

Makes 3 cups (750 mL)
