Banana Pecan Waffles

Banana Pecan Waffles from 250 Gluten-Free Favorites!


Dairy-free / Lactose-free

Makes six 412-inch (11 cm) waffles (1 per serving)


Recipe can be doubled or tripled.

Store extra waffles between layers of waxed paper in an airtight container in the refrigerator for up to 3 days, or in a plastic freezer bag in the freezer for up to 1 month. Reheat from frozen in the toaster.

Resist the temptation to add extra liquid — the batter should be thick.

Beat the batter until smooth — no need to leave it lumpy.


         Waffle maker, lightly greased, then preheated

34 cup     sorghum flour            175 mL

14 cup     quinoa flour            50 mL

14 cup     tapioca starch            50 mL

2 tbsp       white (granulated) sugar            25 mL

12 tsp       xanthan gum            2 mL

214 tsp     GF baking powder            11 mL

34 tsp       baking soda            4 mL

Pinch        salt           

12 cup     chopped pecans            125 mL

2              eggs, separated          

1 cup        mashed bananas            125 mL

2 tbsp       vegetable oil            25 mL

1. In a large bowl or plastic bag, combine sorghum flour, quinoa flour, tapioca starch, sugar, xanthan gum, baking powder, baking soda, salt and pecans. Mix well and set aside.

2. In a small bowl, using an electric mixer, preferably with wire whisk attachment, beat egg whites until stiff but not dry.

3. In a separate bowl, using an electric mixer, beat egg yolks, bananas and oil until combined. Add dry ingredients and beat until smooth. Fold in beaten egg whites.

4. Pour in enough batter to fill preheated waffle maker two-thirds full. Close lid and cook for 5 to 7 minutes or until no longer steaming. Repeat with remaining batter, greasing waffle maker between waffles as necessary.

Variation: Increase the sugar to 14 cup (50 mL) to turn these into dessert waffles, and serve with fresh fruit and or chocolate sauce.
